I’m getting hungry just by looking at the photo. This is what I could eat for all my meals if you let me and since we’ve been having a few barbies during this nice weekend, I must confess it is what I have been eating lately with all my meals.
But you probably already guessed that, since that bowl is looking quite empty.
Super easy to make, just toss some nice and sweet tomatoes, cubes of mozzarella cheese and torn bits of fresh basil in a bowl. Add a bit of some good quality extra virgin olive oil and a dash of balsamic vinegar and mix well. Then just let it sit for a bit so all the flavours mix and match and play nice. The last thing to do is slice some bread and enjoy it all.
Quick, go add the ingredients to your grocery list. And if you make it, let me know what you think of it.
Now if you’ll excuse me, I think it’s time for lunch around here. I wonder what I could have…

Yum – that’s one of my favourites too but I like to add black olives as well. Don’t know if we’ll have it anytime soon though, as hubby knocked my basil plant off the windowsill into the washing up water tonight – humph.

Oh my goodness, I have been eating the same tomato + mozzarella + basil combo for the last few days. So delicious! I ran out of my favorite baguette, so I must pick some up tomorrow! Have a lovely weekend!

Um-Yum! Similar to this wonderful thing I had at an Italian restaurant — slices of tomato, slices of mozzerella, all drizzled with x-virgin o.o. and basil, with fresh bread. Pure, unadulterated heaven. I’ve tried duplicating it, only I was impatient & didn’t let the flavors mingle long enough.

Mmmm…this sounds quite like a ‘tuscan bread salad’ listed in one of the first Martha Stewart Everday Food magazines that I ever bought. It called for cubed bread in there, and it got nice and soggy and flavoured from olive oil and red wine vinegar…I love it with tomato bits and little cheese chunks. Isn’t it the perfect cold snacky dish? I put it in the fridge to let the flavours combine, but it nevers last long, because I can’t stop munching on it! Beautiful photo, thanks.

We always have tomato, cheese (either mozarella or feta), olive oil and dried oregano- a slice of summer in your plate, only we have it in winter time too. I must try it with balsamic vinegar.

adding this to my grocery list for sure! i’ll let you know how it turns out…i’m not a huge cherry tomato fan, so I might have to either use sliced tomatoes or another vegetable. But the colors and the balsamic and olive oil and fresh basil???!! oh my!! yum.

I love this combo and even though it’s 6:00 A.M. I want some!! I usually try and make it with yummy soft buffalo mozzarella made by a small cheese shop here in Dallas. For parties slice summer tomatoes on a platter and top with the cheese and lots of torn basil. Sometimes I sneak in some of my other favorite thing, capers. Then of course the oil and balsamic! Thank you for reminding me!!

I must say Adriana, since you posted this quickie cheese/tomatoe salad, I have made it not only once since, but TWICE! I made some to bring along for Saturday dinner at our friends and everyone has loved it. THANK YOU so much!
BTW, the magazine swap sounds like great fun, but I will have to stew on it for a bit (you probably have more Americans than any others…so.. I do have local access to a fantastic Japanese bookstore downtown, though (just incase!)). Hmmm.. I must decide. Could the magazines be preloved? I have a HUGE stash…just curious. New is all good, too!
